Raspberry Cheesecake Brownies feature rich, fudgy chocolate brownie layers swirled with creamy cheesecake and sweet-tart raspberry sauce for a decadent and beautifully marbled dessert.

Ingredients

  • For the brownie layer:
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • For the cheesecake layer:
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • For the raspberry swirl:
  • 1/2 cup fresh or frozen raspberries
  • 1 tablespoon sugar

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. Whisk melted butter and sugar together until combined.
  3. Add eggs and vanilla extract, mixing until smooth.
  4. Stir in cocoa powder, flour, and salt until just combined.
  5. Spread about three-quarters of the brownie batter evenly into the prepared pan.
  6. Beat cream cheese and sugar until smooth. Add egg and vanilla, mixing until creamy.
  7. Spread cheesecake mixture evenly over the brownie layer.
  8. Drop spoonfuls of remaining brownie batter over the cheesecake layer.
  9. In a small saucepan over low heat, cook raspberries with sugar for 3–4 minutes until softened and lightly mashed.
  10. Spoon raspberry mixture over the top and gently swirl with a knife.
  11. Bake for 35–40 minutes until the center is set and a toothpick inserted into the brownie portion comes out with moist crumbs.
  12. Cool completely before slicing for clean layers.

Notes

  • Chill completely before slicing for neat squares.
  • Frozen raspberries can be used without thawing.
  • Do not overbake to prevent cracking in the cheesecake layer.
  • Store in the refrigerator due to the cream cheese layer.
  • Freeze tightly wrapped for up to 2 months.
  • Use full-fat cream cheese for the creamiest texture.
