A quick, rustic one-pan dish that highlights the natural sweetness of fresh tomatoes sautéed with garlic, olive oil, and herbs. Perfect as a topping, side dish, or light main, ready in under 15 minutes.

Ingredients

  • 2 cups fresh ripe tomatoes (any variety), chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh basil or parsley, chopped
  • Optional: 1/4 teaspoon red pepper flakes
  • Optional: 1/4 cup chopped onion
  • Optional: 1 teaspoon balsamic vinegar
  • Optional: 1/2 teaspoon dried oregano

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic (and onion if using) and sauté for 30–60 seconds until fragrant.
  3. Add chopped tomatoes to the pan.
  4. Season with salt, black pepper, and any optional spices or herbs.
  5. Cook for 5–8 minutes, stirring occasionally, until tomatoes soften and release their juices but still hold some texture.
  6. Stir in fresh basil or parsley just before serving.
  7. Serve warm as a side dish or over toast, pasta, rice, or protein.

Notes

  • Use cherry or grape tomatoes for extra sweetness.
  • Don’t overcook—the tomatoes should soften but not become mushy.
  • Add chili flakes for heat or balsamic for a sweet-tangy twist.
  • Great as a base for pasta sauces or a topping for grilled meats.
  • Fresh herbs are best, but dried herbs work in a pinch.
