Quick Margherita flatbread pizza is a fast and fresh twist on classic pizza, made with store-bought flatbread, creamy mozzarella, juicy tomatoes, and fragrant basil. It’s ready in minutes and perfect for a light meal or easy appetizer.

Ingredients

  • 2 pieces store-bought flatbread or naan
  • 4 oz fresh mozzarella (sliced or pearls)
  • 23 fresh tomatoes (Roma, cherry, or heirloom), sliced and patted dry
  • 1 tbsp olive oil
  • 1 clove garlic, minced (or 1/2 tsp garlic powder)
  • Salt and pepper to taste
  • Fresh basil leaves
  • Optional: balsamic glaze, grated parmesan, red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place the flatbread on a baking sheet.
  3. Brush each flatbread lightly with olive oil and sprinkle with garlic or garlic powder.
  4. Arrange mozzarella slices evenly across the flatbread.
  5. Top with sliced tomatoes and season with salt and pepper.
  6. Bake for 8–10 minutes, until cheese is melted and flatbread is crisp.
  7. Remove from oven and top with fresh basil leaves.
  8. Drizzle with balsamic glaze or sprinkle with parmesan/red pepper flakes if desired.
  9. Slice and serve warm.

Notes

  • Dry tomatoes and mozzarella before assembling to avoid sogginess.
  • For a crispier base, bake directly on the oven rack.
  • Add arugula or prosciutto after baking for variation.
  • Use shredded mozzarella if fresh is unavailable.
  • Great for quick lunches or easy appetizers.
