Pico de Gallo is a fresh and vibrant Mexican salsa made from diced tomatoes, onions, cilantro, lime juice, and a touch of heat from jalapeños. It’s a quick, easy, and flavorful addition to any meal, perfect as a topping for tacos, nachos, or grilled meats, or simply enjoyed with tortilla chips.

Ingredients

  • 3 medium tomatoes, diced
  • 1/2 small red onion, finely diced
  • 12 jalapeños, seeds removed and finely chopped (adjust to your spice preference)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste

Instructions

  1. Dice the tomatoes, red onion, and jalapeños into small pieces and place them into a medium-sized mixing bowl.
  2. Add the chopped cilantro and lime juice to the bowl.
  3. Season with salt and pepper to taste, and mix everything together until evenly combined.
  4. Taste and adjust seasoning if needed, adding more lime juice or salt for extra flavor.
  5. Let the Pico de Gallo sit for about 10-15 minutes to allow the flavors to meld together before serving.

Notes

  • For extra heat, leave some seeds in the jalapeños or add cayenne pepper or hot sauce.
  • To create a sweet variation, add diced mango for a tropical twist.
  • Add grilled or fresh corn for a sweet, crunchy addition.
