Purple Sticky Rice is a naturally vibrant and slightly sweet Southeast Asian dish made with black glutinous rice. It’s chewy, nutty, and traditionally served with coconut milk and tropical fruit toppings, perfect as a dessert or breakfast.

Ingredients

  • 1 cup purple (black) glutinous rice
  • 2 cups water (for soaking)
  • 1 cup coconut milk
  • 1/4 cup sugar (white or palm sugar)
  • 1/4 tsp salt
  • Optional toppings: toasted sesame seeds, mango slices, banana, or coconut cream

Instructions

  1. Rinse the purple sticky rice under cold water until the water runs mostly clear.
  2. Soak the rice in water for at least 4 to 6 hours or overnight for best texture.
  3. Drain the rice and steam it in a traditional sticky rice steamer or a heat-safe basket lined with cheesecloth for about 30 to 40 minutes, or until tender and sticky.
  4. While the rice steams, combine coconut milk, sugar, and salt in a saucepan. Warm over medium heat, stirring until the sugar is dissolved.
  5. Once the rice is cooked, transfer it to a bowl and gently mix in some of the coconut milk mixture. Let it sit for 10–15 minutes to absorb the flavors.
  6. Serve warm or at room temperature, topped with extra coconut milk and desired toppings like mango, banana, or sesame seeds.

  • Soaking the rice is essential for achieving the proper sticky texture.
  • Use full-fat coconut milk for the creamiest result.
  • Adjust sugar to your preferred sweetness.
  • Leftovers make a great rice pudding when simmered with more coconut milk.
  • Avoid freezing, as the rice may become grainy.
