Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • ½ cup milk or buttermilk
  • ¼ cup butter, melted
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella or Monterey Jack cheese
  • 2 cloves garlic, minced (optional)
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, combine flour, baking powder, salt, and garlic powder.
  3. In another bowl, whisk together pumpkin puree, eggs, milk, and melted butter until smooth.
  4. Add wet ingredients to dry ingredients and stir just until combined—do not overmix.
  5. Fold in shredded cheeses and minced garlic.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Sprinkle additional cheese on top for a golden crust.
  8. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve warm, garnished with parsley or chives.
