A creamy, energizing Pumpkin Coffee Smoothie that blends pumpkin pie flavors with cold brew coffee for a cozy yet refreshing drink. Perfect for a quick breakfast, post-workout fuel, or a seasonal treat.

Ingredients

  • 1/2 cup cold brew coffee or chilled brewed coffee
  • 1/2 cup pumpkin purée (not pumpkin pie filling)
  • 1 frozen banana
  • 1/2 cup Greek yogurt or non-dairy yogurt
  • 1/2 cup almond milk (or any milk of choice)
  • 12 tsp maple syrup or honey (optional, to taste)
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • 1/2 cup ice cubes (optional, for thickness)

Instructions

  1. Add all ingredients to a high-speed blender: coffee, pumpkin purée, frozen banana, yogurt, almond milk, sweetener (if using), pumpkin pie spice, and vanilla extract.
  2. Blend on high until smooth and creamy.
  3. Taste and adjust sweetness or spice as desired.
  4. If you prefer a thicker smoothie, add ice cubes and blend again until smooth.
  5. Pour into a glass and enjoy immediately.
