Puff Pastry Carrot Tart is an elegant, easy-to-make dish featuring roasted carrots on a flaky puff pastry base with a creamy spread, perfect for brunch, lunch, or as a vegetarian centerpiece.

Ingredients

  • 1 sheet puff pastry, thawed
  • 45 medium carrots, peeled and thinly sliced (lengthwise or into coins)
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • ½ teaspoon dried thyme or fresh thyme leaves
  • ¼ cup vegan cream cheese or cashew cheese spread
  • 1 tablespoon Dijon mustard (optional)
  • Fresh herbs for garnish (parsley, thyme, or dill)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sliced carrots with olive oil, salt, pepper, and thyme. Roast for 15–20 minutes until slightly tender and starting to brown.
  3. Roll out puff pastry on the prepared baking sheet. Score a 1-inch border around the edge and prick the center with a fork.
  4. Mix vegan cream cheese and Dijon mustard (if using), then spread it within the scored border of the pastry.
  5. Arrange roasted carrots in a single layer over the spread.
  6. Bake the tart for 20–25 minutes, until the pastry is puffed and golden.
  7. Cool slightly, then garnish with fresh herbs. Slice and serve warm or at room temperature.
