Puff Pastry Breakfast Pizza is a flaky, golden pastry topped with eggs, cheese, and your favorite breakfast toppings like , sausage, or vegetables. This easy yet impressive dish is perfect for brunch, holidays, or a cozy weekend breakfast.

Ingredients

  • 1 sheet puff pastry (store-bought, thawed)
  • 34 large eggs
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 2 tablespoons heavy cream or milk
  • Salt and black pepper, to taste
  • 1 egg + 1 tablespoon water (for egg wash)
  • Optional toppings: spinach, bell peppers, onions, mushrooms, tomatoes, green onions, or herbs

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry on the baking sheet. Lightly score a 1-inch border around the edges with a sharp knife, being careful not to cut all the way through.
  3. Use a fork to prick small holes in the center of the pastry to prevent it from puffing excessively.
  4. Brush the border with an egg wash (1 beaten egg mixed with 1 tablespoon water).
  5. Pre-bake the puff pastry for 8–10 minutes, or until lightly golden.
  6. Remove from the oven and gently press down the center if it puffed up.
  7. Sprinkle shredded cheese evenly inside the border, then add , sausage, or vegetables.
  8. Create small wells in the toppings and crack eggs directly into them (or pour scrambled eggs if preferred).
  9. Season with salt and pepper to taste.
  10. Return to the oven and bake for 10–12 minutes, or until eggs are set and pastry is golden brown.
  11. Remove from the oven, top with green onions or herbs, and let cool for a few minutes before slicing.
