Ingredients

  • 1 lb. russet potatoes, sliced into thin rounds
  • 1 cup shredded cheddar cheese
  • Olive oil (for drizzling)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Wash and peel the russet potatoes. Slice them into thin rounds, about 1/8-inch thick.
  3. Arrange the potato slices in a single layer on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  4. Bake for 25-30 minutes or until the potatoes are golden and crispy, flipping halfway through for even crispiness.
  5. Remove the potatoes from the oven and sprinkle shredded cheddar cheese over the top. Return the sheet to the oven for an additional 5-7 minutes or until the cheese is melted and bubbly.
  6. Remove from the oven and serve immediately, garnished with optional toppings like sour cream, and chopped green onions.
