Potato Fritters are crispy, savory patties made from grated potatoes, herbs, and seasonings—perfect as a snack, side, or appetizer. Easy to make, customizable, and naturally vegan and gluten-free friendly.

Ingredients

  • 2 large potatoes, peeled and grated
  • ¼ small onion, finely chopped or grated
  • 2 tablespoons chopped parsley or chives
  • 2 tablespoons all-purpose flour or chickpea flour
  • 1 tablespoon cornstarch (optional, for extra crispiness)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • Oil for pan-frying

Instructions

  1. Grate the potatoes and place them in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  2. In a large bowl, mix grated potatoes, onion, herbs, flour, cornstarch, salt, pepper, and garlic powder until fully combined.
  3. Scoop and shape the mixture into small, flat patties.
  4. Heat a thin layer of oil in a skillet over medium heat. Fry the fritters in batches for 3–4 minutes per side, until golden and crispy. Drain on paper towels.
  5. Serve hot with your favorite dip such as vegan sour cream, tahini, or spicy ketchup.

Notes

  • Use starchy potatoes like Russets for best crispiness and binding.
  • Be sure to squeeze out all excess moisture from grated potatoes to prevent soggy fritters.
  • Chickpea flour makes these gluten-free and adds a nutty flavor.
  • Reheat leftovers in a skillet or air fryer to maintain crispiness.
