Pistachio Pop is a delightful, crunchy snack or dessert that features the rich, nutty flavor of pistachios combined with a sweet and creamy base. This treat is perfect for those who love a mix of textures and the unique taste of pistachios in a satisfying bite.

Ingredients

  1. 1 cup shelled pistachios, roughly chopped
    1/2 cup white chocolate chips or chopped white chocolate
    1/4 cup honey or maple syrup
    1 tablespoon coconut oil
    1/2 teaspoon vanilla extract
    Pinch of sea salt

Instructions

Line a baking sheet with parchment paper.

  1. In a saucepan over low heat, melt white chocolate chips with honey and coconut oil, stirring until smooth.
  2. Remove from heat and stir in vanilla extract and sea salt.
  3. Quickly fold in chopped pistachios until evenly coated.
