Pineapple Slaw Sliders are sweet, tangy, and savory mini sandwiches made with juicy pineapple slaw and your choice of protein, all served on soft slider buns—perfect for summer parties or quick meals.

Ingredients

  • 810 slider buns or Hawaiian rolls
  • 2 cups shredded cooked protein (pulled chicken, pork, tofu, or tempeh)
  • 2 cups shredded cabbage or coleslaw mix
  • 1/2 cup crushed pineapple (drained) or finely chopped fresh pineapple
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tablespoon apple cider vinegar or lime juice
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste
  • Optional toppings: sliced jalapeños, pickles, fresh cilantro

Instructions

  1. In a large bowl, mix shredded cabbage, pineapple, mayonnaise or yogurt, vinegar or lime juice, and honey if using.
  2. Season with salt and pepper to taste and mix well. Chill the slaw in the refrigerator while preparing other ingredients.
  3. Warm or cook your chosen protein if needed.
  4. Slice slider buns in half and toast lightly if desired.
  5. Place the protein on the bottom halves of the buns.
  6. Top each with a generous spoonful of pineapple slaw.
  7. Add any optional toppings such as jalapeños or pickles.
  8. Place the top buns on and serve immediately, or chill for a cold version.
