Ingredients

  2. For the pineapple BBQ sauce:
    • 1 cup pineapple chunks (fresh or canned)
    • 1 cup BBQ sauce (store-bought or homemade)
    • 2 tablespoons honey (optional)
    • 1 tablespoon soy sauce
    • 1 teaspoon grated ginger (optional)
  3. For garnish:
    • Fresh cilantro or parsley, for garnish (optional)
    • 12 fresh pineapple rings (for grilling, optional)

Instructions

Prepare the chicken: Preheat your grill or oven to medium-high heat (about 375°F or 190°C). Season the chicken breasts with olive oil, salt, and pepper.

  1. Make the pineapple BBQ sauce: In a medium saucepan, combine the BBQ sauce, pineapple chunks, honey (if using), soy sauce, and grated ginger. Simmer for 5-7 minutes, stirring occasionally. Mash the pineapple into the sauce for texture, then remove from heat.
  2. Cook the chicken:
    • Grill Method: Grill the chicken for 5-7 minutes per side, basting with the pineapple BBQ sauce every 2-3 minutes.
    • Oven Method: Bake the chicken for 20-25 minutes, basting with the sauce halfway through. Ensure the internal temperature reaches 165°F (74°C).
  3. Grill the pineapple rings: Grill fresh pineapple rings for 1-2 minutes per side until lightly charred.
  4. Assemble and serve: Drizzle the cooked chicken with the remaining pineapple BBQ sauce. Top with grilled pineapple rings and garnish with cilantro or parsley. Serve with rice, grilled vegetables, or a salad.
