Pickle De Gallo is a tangy, crunchy twist on traditional pico de gallo, made with pickled cucumbers, red onions, and fresh cilantro. This zesty salsa is perfect as a topping for tacos, grilled meats, or a dip for chips.

Ingredients

  1. 1 cup pickled cucumbers, diced (store-bought or homemade)
1/2 cup pickled red onions, diced
    1 medium tomato, diced
    1/4 cup fresh cilantro, chopped
    1 tablespoon lime juice
    1 tablespoon olive oil
    Salt and pepper to taste

Instructions

Prepare the Pickled Vegetables: Drain store-bought pickled cucumbers and onions, or ensure your homemade pickles have had enough time to marinate.

  1. Dice the Ingredients: Dice the pickled cucumbers, pickled red onions, and tomato into small, even pieces. Chop the cilantro finely.
  2. Mix the Ingredients: In a medium bowl, combine the diced cucumbers, pickled onions, tomato, and cilantro.
  3. Season: Drizzle the lime juice and olive oil over the mixture. Stir to combine and season with salt and pepper to taste.
  4. Chill: Let the Pickle De Gallo sit for about 10-15 minutes to allow the flavors to meld.
  5. Serve: Serve this tangy salsa as a topping for tacos, grilled meats, or as a dip for tortilla chips.

Notes

  • If you prefer a spicier version, add finely chopped jalapeños or chili flakes.
  • For a creamier texture, consider adding diced avocado.
  • This salsa is best served fresh but can be stored in the fridge for 1-2 days.
