Ingredients

  • 12 oz short pasta (rotini, penne, or fusilli)
  • 1/2 cup basil pesto (homemade or store-bought)
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella pearls or cubed mozzarella
  • 1 cup fresh spinach or arugula
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons pine nuts or walnuts, toasted
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon lemon juice (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, toss the cooled pasta with basil pesto until evenly coated.
  3. Add cherry tomatoes, mozzarella, spinach, red onion, and nuts. Toss gently to combine.
  4. Season with salt, pepper, and a squeeze of lemon juice if desired.
  5. Garnish with fresh basil and serve immediately or chill for 30 minutes before serving.
