Ingredients

  1. 1 pound fresh asparagus, trimmed
    2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
1/3 cup basil pesto (store-bought or homemade)
Optional: lemon zest or grated Parmesan cheese for garnish

Instructions

Preheat oven to 425°F (220°C).

  1. Place asparagus on a baking sheet and drizzle with olive oil, tossing to coat.
  2. Season with salt and pepper.
  3. Roast for 12-15 minutes until tender and slightly crispy.
  4. Remove from oven and transfer to a serving dish.
  5. Toss asparagus with basil pesto until evenly coated.
  6. Optional: garnish with lemon zest or grated Parmesan cheese.
  7. Serve warm or at room temperature.

Notes

  1. Grill asparagus instead of roasting for smoky flavor.
  2. Use different pesto varieties like sun-dried tomato or kale pesto.
  3. Add toasted pine nuts or slivered almonds for crunch.
  4. Mix in cherry tomatoes or roasted red peppers for added color and sweetness.
  5. Drizzle with balsamic glaze before serving for tangy finish.
  6. Store leftovers in airtight container in refrigerator up to 2 days.
  7. Reheat gently in oven or enjoy cold as a salad.
