Persian Beef Stew is a rich and aromatic dish made with tender chunks of beef simmered slowly with onions, warm spices, tomato paste, and vegetables. The long simmering time creates a deeply flavorful sauce and melt-in-your-mouth beef, making it a comforting meal traditionally served with fluffy basmati rice.

Ingredients

  • lbs beef chuck, cut into cubes
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups beef broth
  • 2 medium potatoes, peeled and cubed
  • 2 carrots, sliced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onions and cook until soft and golden.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Add beef cubes and brown them on all sides.
  5. Stir in turmeric, cinnamon, salt, and black pepper to coat the beef.
  6. Add tomato paste and cook for 2 minutes to deepen the flavor.
  7. Pour in beef broth and bring the mixture to a gentle simmer.
  8. Cover and cook on low heat for about 60 minutes, stirring occasionally.
  9. Add potatoes and carrots and continue simmering for another 30–40 minutes until the beef and vegetables are tender.
  10. Stir in chopped parsley and lemon juice before serving.
  11. Taste and adjust seasoning if needed, then serve hot.

Notes

  • Dried limes can be added during simmering for a traditional Persian tangy flavor.
  • The stew tastes even better the next day as the flavors deepen.
  • Serve with basmati rice or flatbread for a complete meal.
