Pecan Pie Bars are a portable, easy-to-make version of classic pecan pie, featuring a buttery shortbread crust and a gooey, nutty filling. They’re perfect for holidays, potlucks, or anytime you want a sweet, crowd-pleasing dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease lightly.
  2. In a mixing bowl, combine flour, granulated sugar, and salt. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake crust for 15–20 minutes or until lightly golden. Remove from oven.
  5. In a separate bowl, whisk together eggs, light corn syrup, brown sugar, vanilla extract, and salt until well combined.
  6. Stir in chopped pecans.
  7. Pour the filling evenly over the pre-baked crust.
  8. Return to oven and bake for 30–35 minutes, or until the center is set and the top is golden brown.
  9. Allow bars to cool completely in the pan before cutting into squares.

Notes

  • Let bars cool completely for cleaner cuts; refrigerate before slicing if needed.
  • Store in an airtight container at room temperature or in the fridge.
  • Use maple syrup for a deeper flavor or add chocolate chips for variation.
  • Freeze for up to 2 months for longer storage.
