Ingredients

  1. 1 lb ground chicken (or chicken breast, finely chopped)
    2 tablespoons olive oil
    1 small onion, finely chopped
    2 cloves garlic, minced
    1 tablespoon grated ginger
    1/2 cup shredded carrots
    1/2 cup red bell pepper, finely chopped
    2 tablespoons soy sauce (or tamari for gluten-free)
    1 tablespoon hoisin sauce
    1 tablespoon rice vinegar
    1 tablespoon brown sugar or honey
    1/4 cup peanut butter (smooth or crunchy)
    1/4 cup water (to thin out the peanut sauce)
    1 tablespoon sesame oil
    1/4 cup cilantro, chopped (for garnish)
    1/4 cup chopped peanuts (for garnish)
    1 head butter lettuce or iceberg lettuce, leaves separated and washed
    Lime wedges (for serving)

Instructions

In a large skillet, heat olive oil over medium heat. Add the ground chicken and cook, breaking it apart with a spoon, until browned and fully cooked, about 5-7 minutes.

  1. Add the chopped onion, garlic, and grated ginger to the skillet and sauté for 2-3 minutes until softened and fragrant.
  2. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar (or honey), peanut butter, and water. Stir until smooth and well combined.
  3. Pour the peanut sauce into the skillet with the cooked chicken. Stir to coat the chicken evenly in the sauce. Add the shredded carrots and red bell pepper, and cook for an additional 2-3 minutes, until the vegetables are tender.
  4. Carefully separate the lettuce leaves and wash them thoroughly. Spoon the peanut chicken mixture into each lettuce leaf.
  5. Top with chopped cilantro, peanuts, and a squeeze of lime juice for extra flavor. Serve immediately and enjoy!
