Peanut Butter Lunch Lady Cookie Bars are a nostalgic treat with soft, chewy bars topped with a creamy peanut butter frosting. Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 ½ cups peanut butter
  • 3 sticks butter
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp salt
  • 4 cups powdered sugar
  • 2 eggs
  • ½ cup milk

Instructions

  • Preheat the oven to 400°F (200°C) and grease a large cookie sheet.
  • In a mixing bowl, combine flour, sugar, baking soda, and salt. Set aside.
  • In another bowl, whisk together milk, vanilla, and eggs. Set aside.
  • Melt butter and peanut butter together in a saucepan over medium heat. Mix with dry ingredients until smooth. Add egg mixture and mix until combined.
  • Spread batter evenly onto prepared cookie sheet and bake for 20 minutes or until golden brown. Let cool completely.
  • For the frosting, melt butter and peanut butter in a saucepan. Add milk and powdered sugar, stirring until smooth. Spread over cooled bars.

Notes

  • For a chocolate twist, add mini chocolate chips to the batter or drizzle melted chocolate on top before frosting.
  • Use crunchy peanut butter for a textured version of these bars.
