Ingredients
1 cup creamy peanut butter
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
60–80 mini pretzels (for 30–40 sandwiches)
1 1/2 cups semi-sweet or milk chocolate chips
1 tbsp coconut oil or shortening (optional)
Instructions
In a medium bowl, mix peanut butter, softened butter, powdered sugar, and vanilla extract until smooth and thick.
Roll about 1 teaspoon of the mixture into small balls.
Sandwich each ball between two mini pretzels and press gently to flatten slightly.
Place the pretzel sandwiches on a parchment-lined baking sheet and freeze for 20–30 minutes until firm.
Melt chocolate chips with coconut oil or shortening (if using) in a microwave-safe bowl or double boiler until smooth.
Dip half of each chilled pretzel sandwich into the melted chocolate, allowing excess to drip off.
Return dipped bites to the baking sheet and refrigerate until the chocolate is set, about 15–20 minutes.
Serve chilled or at room temperature.
Notes
Use processed peanut butter for best results; natural peanut butter may be too soft or oily.
Sprinkle sea salt or festive sprinkles on chocolate before it sets for decoration.
Adjust filling size based on pretzel size for better shape and stability.
