Pasta Sorrentina with Tomatoes, Basil, and Fresh Mozzarella

Pasta Sorrentina is a classic Italian pasta dish made with a simple tomato sauce, fresh basil, and creamy mozzarella. It’s comforting, easy to make, and full of fresh Mediterranean flavors.

Ingredients

  • 12 oz pasta (penne, rigatoni, or gnocchi)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups cherry tomatoes or 1 can (14 oz) crushed tomatoes
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, torn
  • 8 oz fresh mozzarella (pearls or chopped)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Sauté garlic for 30 seconds until fragrant.
  3. Add cherry or crushed tomatoes. Simmer for 8–10 minutes until thickened. Season with salt, pepper, and red pepper flakes if using.
  4. Add cooked pasta to the skillet and toss to coat. Add reserved pasta water a little at a time if sauce is too thick.
  5. Remove skillet from heat. Stir in fresh basil and mozzarella. Let sit for a minute to allow cheese to melt slightly.
  6. Top with additional basil and Parmesan if desired. Serve warm.

Notes

  • Add grilled chicken or sausage for a protein boost.
  • Stir in spinach or roasted veggies for extra nutrients.
  • Use burrata instead of mozzarella for a creamier texture.
  • For spice, use Calabrian chili paste or more red pepper flakes.
  • Add mozzarella off the heat to prevent it from becoming rubbery.
