Ingredients

2 tablespoons olive oil
1 small onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 can (15 oz) cannellini or navy beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
6 cups vegetable or chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper to taste
1 cup small pasta (ditalini, elbow macaroni, or small shells)
2 cups fresh spinach or kale (optional)
Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in beans, diced tomatoes, broth, oregano, basil, thyme, salt, and pepper. Bring to a boil.
  4. Add pasta and reduce heat to a simmer. Cook until pasta is al dente, about 8-10 minutes.
  5. If using, stir in fresh spinach or kale and cook until wilted, about 2 minutes.
  6. Adjust seasoning as needed and serve hot with grated Parmesan cheese if desired.
