Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs
  • 2 tablespoons olive oil
  • For the lemon garlic butter sauce:
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1/4 cup chicken broth
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 400°F and lightly grease a baking dish or line a baking sheet with parchment paper.
  2. Pound chicken breasts to even thickness if needed and season with salt and black pepper.
  3. In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, and Italian seasoning.
  4. In a separate bowl, whisk the eggs.
  5. Dip each chicken breast into the egg mixture, then coat thoroughly in the Parmesan mixture, pressing gently to adhere.
  6. Heat olive oil in a skillet over medium heat.
  7. Sear chicken for 2–3 minutes per side until golden brown.
  8. Transfer to prepared baking dish and bake for 15–20 minutes until internal temperature reaches 165°F.
  9. Meanwhile, melt butter in a small saucepan over medium heat.
  10. Add garlic and cook for about 1 minute until fragrant.
  11. Stir in lemon juice and chicken broth; simmer for 2–3 minutes until slightly reduced.
  12. Remove from heat and stir in parsley.
  13. Drizzle sauce over baked chicken before serving.
