Parmesan Baked Potatoes are a crispy, cheesy, and savory side dish that’s quick to prepare and packed with flavor. Ingredients

lbs baby Yukon Gold potatoes, halved

3 tbsp unsalted butter

½ cup freshly grated Parmesan cheese

1 tsp garlic and herb seasoning

½ tsp kosher salt

Instructions

  1. Preheat the Oven: Preheat oven to 425°F (220°C). Place butter in a 9×13-inch baking dish and let it melt in the oven for about 4 minutes.

  2. Prepare the Potatoes: While the butter melts, score the cut side of the halved potatoes in a shallow crosshatch pattern (about ¼ inch deep).

  3. Mix Seasoning: In a bowl, combine Parmesan cheese, garlic and herb seasoning, and kosher salt.

  4. Assemble: Remove baking dish from the oven. Evenly sprinkle the Parmesan mixture into the melted butter to form a base. Press each potato half cut-side down into the mixture.

  5. Bake: Return the dish to the oven and bake for 25 minutes, or until potatoes are fork-tender and the Parmesan crust is golden brown.

  6. Serve: Allow to cool for 5 minutes before serving to help the crust set.

Notes

  • For extra flavor, add fresh rosemary or thyme to the Parmesan mix.

  • For a spicy version, add a pinch of cayenne or paprika.
