Overnight French Toast Bake is a rich, custardy breakfast casserole made by soaking cubed bread in a sweet egg mixture overnight, then baking it to golden perfection. It’s perfect for holidays, brunch, or feeding a crowd.

Ingredients

  • 1 loaf thick-cut bread (brioche, challah, or French), cut into 1-inch cubes
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/4 tsp salt
  • 2 tbsp butter, cut into small cubes (for dotting on top)
  • Powdered sugar (for topping)
  • Maple syrup (for serving)

Instructions

  1. Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Cut the bread into 1-inch cubes and place evenly in the dish.
  3. In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, nutmeg (if using), and salt.
  4. Pour the custard mixture evenly over the bread cubes, pressing down slightly.
  5. Cover the dish and refrigerate overnight or for at least 8 hours.
  6. Preheat oven to 350°F (175°C). Let the dish sit at room temp for 20–30 minutes.
  7. Dot the top with butter and bake uncovered for 45–55 minutes, until golden and custard is set.
  8. Let cool 5–10 minutes. Dust with powdered sugar and serve with maple syrup.

Notes

  • Use day-old or slightly stale bread for best texture.
  • Add fruit, nuts, or chocolate chips for variation.
  • Can be prepared up to 24 hours in advance before baking.
