Ingredients

  • 2 chicken breasts, diced
  • 8 oz elbow macaroni
  • 1 tbsp olive oil
  • 1 cup marinara sauce

Instructions

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add diced chicken and cook for 6-7 minutes until browned and cooked through.
  • Add elbow macaroni to the pot, then pour in 2 cups of water (or chicken broth for extra flavor) and marinara sauce. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the pasta is cooked and the sauce has thickened.
  • Stir in your choice of shredded cheese (parmesan, mozzarella, or a mix) until melted and creamy.
  • Taste and adjust seasoning with salt and pepper, then serve hot.

Notes

  • Add a cheesy garlic bread topping by mixing breadcrumbs with butter and garlic, then broil for a crispy finish.
  • For a vegetarian version, add more veggies or substitute the chicken with tofu or tempeh.
  • Experiment with different cheeses like cheddar or provolone for added flavor.
