One Pot Cheesy Taco Pasta combines seasoned ground beef, tender pasta, and melty cheese into a bold, comforting, and quick dinner. All cooked in one pot, it’s perfect for busy weeknights with minimal cleanup.

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (optional, if needed)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups short pasta (shells or elbow macaroni)
  • 2 1/2 cups beef or chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • Optional toppings: sour cream, chopped cilantro, jalapeños, green onions

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat (if needed). Add ground beef and cook until browned. Drain excess fat if necessary.
  2. Add diced onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
  3. Stir in taco seasoning and tomato paste until beef is evenly coated.
  4. Add diced tomatoes, uncooked pasta, and broth. Stir well and bring to a boil.
  5. Reduce heat to a simmer, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is tender.
  6. Remove the lid and stir in shredded cheddar and Monterey Jack cheese until melted and creamy.
  7. Serve hot with optional toppings like sour cream, jalapeños, cilantro, or green onions.

  • Use ground turkey or chicken for a lighter version.
  • To make it spicier, add hot sauce or chili flakes.
