Ingredients

  • 1 pound chicken breast or thighs, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 3 cups broccoli florets
  • 2 cups shredded cheddar cheese
  • 2 cups chicken broth
  • 1 cup milk
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil or butter in a large pot over medium heat.
  2. Add the chopped onion and garlic and cook for 2 to 3 minutes, until softened and fragrant.
  3. Add the chicken pieces and cook for 4 to 5 minutes, stirring occasionally, until lightly browned on the outside.
  4. Stir in the rice and cook for 1 minute to lightly toast it.
  5. Pour in the chicken broth and milk, then stir well and bring the mixture to a gentle simmer.
  6. Cover the pot and cook for 12 to 15 minutes, stirring once or twice, until the rice is nearly tender.
  7. Add the broccoli florets, cover again, and cook for 5 more minutes, or until the broccoli is tender and the rice is fully cooked.
  8. Remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy.
  9. Season with salt and black pepper to taste, then serve warm.
