This One Pan Taco Rice is a quick and easy skillet meal that brings together taco flavors, seasoned beef, rice, beans, corn, and melty cheese in a single pan. Perfect for busy weeknights or meal prep.

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup long grain white rice
  • 1 (14.5 oz) can diced tomatoes with juices
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 2 cups chicken or beef broth
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and garlic, sauté until fragrant (about 2–3 minutes).
  2. Add ground beef, breaking it apart with a spoon, and cook until browned. Drain excess fat if necessary.
  3. Stir in taco seasoning, mixing well to coat the beef evenly.
  4. Add rice, diced tomatoes with juices, black beans, corn, and broth. Stir to combine thoroughly.
  5. Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 18–20 minutes until rice is tender and liquid is absorbed.
  6. Remove the lid, sprinkle shredded cheese on top, and cover again for a few minutes until cheese melts.
  7. Garnish with fresh cilantro if desired and serve hot.
