A creamy and comforting one-pan beef stroganoff made with tender beef, mushrooms, noodles, and a rich sour cream sauce. This easy recipe is perfect for busy weeknights, offering a hearty meal with minimal cleanup.

Ingredients

  • 1 lb ground beef or thinly sliced beef strips
  • 8 oz egg noodles (uncooked)
  • 8 oz mushrooms, sliced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 1/2 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat oil or butter in a large skillet over medium heat. Add onions and garlic, cooking until fragrant.
  2. Add beef and cook until browned, breaking it apart if using ground beef. Season with salt and pepper.
  3. Stir in mushrooms and cook until softened.
  4. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine.
  5. Add uncooked egg noodles directly into the pan. Cover and simmer for 10–12 minutes, stirring occasionally, until noodles are tender and most liquid is absorbed.
  6. Reduce heat to low, then stir in sour cream until the sauce becomes creamy.
  7. Garnish with fresh parsley before serving.
