Old Fashioned Salisbury Steak is a classic comfort food featuring tender, seasoned beef patties smothered in rich brown onion gravy. It’s hearty, flavorful, and perfect for a cozy family dinner served over mashed potatoes or noodles.

Ingredients

  • 1 lb ground beef (80/20 blend recommended)
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (for cooking)
  • 1 medium yellow onion, thinly sliced
  • 2 cups beef broth
  • 2 tbsp ketchup
  • 1 tsp Dijon or yellow mustard
  • 1 tbsp cornstarch mixed with 2 tbsp cold water
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, onion powder, garlic powder, salt, and pepper until just combined.
  2. Shape the mixture into oval patties, about 3/4 inch thick.
  3. Heat olive oil or butter in a large skillet over medium-high heat. Sear the patties on both sides until browned, about 3–4 minutes per side. Remove and set aside.
  4. In the same skillet, add sliced onions and cook until softened and golden brown.
  5. Pour in the beef broth, ketchup, and mustard. Stir and scrape any browned bits from the bottom of the pan.
  6. Whisk the cornstarch slurry and stir it into the gravy. Simmer until thickened.
  7. Return the patties to the skillet, spoon gravy over them, cover, and simmer for 10–15 minutes, until cooked through.
  8. Serve hot, topped with gravy and sprinkled with fresh parsley if desired.

Notes

  • Do not overmix the beef mixture to keep patties tender.
  • Use mushrooms for a richer, more flavorful gravy.
  • For gluten-free, use gluten-free breadcrumbs and sauce.
  • Can be made ahead and reheated with a splash of broth.
  • Perfectly pairs with mashed potatoes or buttered noodles.
