Ingredients

  • 1/2 cup short or medium-grain white rice
  • 4 cups whole milk (or a mix of milk and cream)
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/3 cup raisins or golden raisins (optional)
  • 1 tablespoon butter (optional, for richness)

Instructions

  1. In a medium saucepan, combine rice, milk, sugar, and salt.
  2. Bring to a gentle simmer over medium heat, stirring frequently to prevent sticking.
  3. Reduce heat to low and cook uncovered for 30–40 minutes, stirring often, until the rice is tender and the mixture has thickened to a pudding-like consistency.
