No Bake Peanut Butter Cereal Bars are chewy, crunchy, and sweet snack bars made with simple pantry staples. Perfect for lunchboxes, snacks, or a healthier dessert—no oven required!

Ingredients

  • 1 cup peanut butter (creamy or natural)
  • 1/2 cup honey or maple syrup
  • 1/2 tsp vanilla extract (optional)
  • 3 cups cereal of choice (crispy rice cereal, cornflakes, or oat-based cereal)
  • Optional mix-ins: 1/4 cup mini chocolate chips, 1/4 cup chopped nuts, 1/4 cup dried fruit, 2 tbsp seeds

Instructions

  1. In a saucepan over low heat, stir together peanut butter and honey until smooth and well combined.
  2. Remove from heat and stir in vanilla extract if using.
  3. In a large bowl, pour the peanut butter mixture over the cereal and stir until fully coated.
  4. Gently fold in any optional mix-ins.
  5. Press the mixture firmly into a lined 8×8-inch pan using a spatula or your hands.
  6. Refrigerate for 20–30 minutes until firm.
  7. Cut into bars and enjoy.

Notes

  • Use well-stirred natural peanut butter to avoid oily separation.
  • Press mixture tightly into the pan to help bars hold together.
  • Add a pinch of salt if using unsweetened peanut butter or maple syrup.
