A refreshing No-Bake Lemon Lavender Tart with a buttery graham cracker crust and a silky, citrus-infused cream filling delicately scented with culinary lavender.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried culinary lavender
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon unflavored gelatin
  • 3 tablespoons cold water (for blooming gelatin)

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture resembles wet sand.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch tart pan. Refrigerate for at least 30 minutes to set.
  3. In a small saucepan, gently warm the heavy cream and dried culinary lavender. Remove from heat and let steep for 10–15 minutes. Strain to remove lavender buds and allow to cool slightly.
  4. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  5. Add lemon juice, lemon zest, and vanilla extract. Mix until fully combined.
  6. Sprinkle gelatin over cold water and let bloom for 5 minutes. Gently heat until fully dissolved but not boiling.
  7. Stir the dissolved gelatin and infused cream into the cream cheese mixture until smooth.
  8. Pour the filling into the chilled crust and smooth the top.
  9. Refrigerate for at least 4 hours, or until fully set.
  10. Garnish with lemon zest or a light dusting of powdered sugar before serving, if desired.

Notes

  • Use culinary-grade lavender and do not steep longer than 15 minutes to avoid bitterness.
  • Ensure gelatin is fully dissolved to prevent a runny filling.
  • Chill thoroughly before slicing for clean cuts.
  • Store covered in the refrigerator for up to 4 days.
  • Freeze tightly wrapped for up to 1 month and thaw in the refrigerator before serving.
