Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil or butter
  • 1 cup mushrooms (button, cremini, or baby bella), finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely chopped
  • 1/3 cup cream cheese or shredded mozzarella
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon fresh thyme or parsley (optional)
  • Salt and pepper, to taste
  • 1/2 teaspoon paprika
  • Toothpicks or kitchen twine, for sealing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil or butter in a skillet over medium heat. Add chopped onions and cook until soft. Stir in mushrooms and garlic, cooking until mushrooms are browned and liquid has evaporated, about 5–7 minutes.
  3. Remove from heat and stir in cream cheese and Parmesan (if using). Add salt, pepper, and herbs. Let cool slightly.
  4. Cut a pocket horizontally into each chicken breast without cutting all the way through.
  5. Stuff each chicken breast with the mushroom mixture and secure with toothpicks or kitchen twine.
  6. Season the outside of the chicken with salt, pepper, and paprika.
  7. Heat a bit more oil in a skillet and sear chicken on both sides until golden brown, 3–4 minutes per side.
  8. Transfer seared chicken to a baking dish and bake for 20–25 minutes, or until internal temperature reaches 165°F.
  9. Let rest for 5 minutes. Remove toothpicks or twine, and serve hot.
