Ingredients

  1. 8 oz pasta (spaghetti, penne, or your favorite pasta)
    2 tablespoons olive oil
    1 onion, chopped
    3 garlic cloves, minced
    8 oz mushrooms, sliced (button, cremini, or a mix)
    4 cups fresh spinach, roughly chopped
    1/2 cup heavy cream (or a dairy-free alternative)
    1/2 cup grated Parmesan cheese (optional, for serving)
    Salt and pepper to taste
    Fresh basil or parsley for garnish (optional)

Instructions

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
  2. Add the minced garlic and sliced mushrooms to the skillet. Sauté for another 5-7 minutes until the mushrooms release their moisture and begin to brown.
  3. Stir in the chopped spinach and cook for about 2 minutes until it wilts. Add the heavy cream and reserved pasta water. Stir and bring the mixture to a simmer. Season with salt and pepper to taste.
  4. Add the cooked pasta to the skillet and toss to coat with the creamy sauce. Let it cook for an additional 2-3 minutes, allowing the flavors to meld and the pasta to absorb some sauce.
  5. Serve the pasta with grated Parmesan cheese, if desired, and garnish with fresh basil or parsley. Serve immediately.
