Mixed Berry Brownie Bites combine rich, fudgy brownies with the tart sweetness of mixed berries in a bite-sized treat, perfect for any occasion.

Ingredients

  1. 1 box of brownie mix (or homemade brownie batter, if preferred)
  2. 1/4 cup vegetable oil (or as per the brownie mix instructions)
  3. 1/4 cup water (or as per the brownie mix instructions)
  4. 2 large eggs (or as per the brownie mix instructions)
  5. 1/2 cup mixed berries (blueberries, raspberries, strawberries, or blackberries)
  6. Powdered sugar (for dusting, optional)

Instructions

  1. Prepare the brownie batter: Preheat your oven to the temperature indicated on the brownie mix package, typically 350°F (175°C). In a large bowl, prepare the brownie batter according to the package instructions, combining the brownie mix, vegetable oil, water, and eggs.
  2. Add berries to the batter: Gently fold the mixed berries into the brownie batter, being careful not to mash them too much. You want to keep some whole for texture and burst of flavor in the brownie bites.
  3. Prepare the mini muffin pan: Lightly grease a mini muffin tin or line it with paper liners for easy removal.
  4. Fill the muffin tin: Spoon the brownie batter into the mini muffin tin, filling each cup about 2/3 of the way full. The batter should make about 12-15 brownie bites, depending on the size of your muffin tin.
  5. Bake the brownie bites: Bake the brownie bites according to the package instructions, usually around 15-20 minutes, or until a toothpick inserted into the center comes out clean (or with a few moist crumbs). Keep an eye on them to ensure they don’t overbake.
  6. Cool and serve: Allow the brownie bites to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. If desired, dust with powdered sugar before serving for an extra touch of sweetness.
