Ingredients

For the Chocolate Cookies:

  • 1 ¼ cups all-purpose flour
  • ½ cup cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract

For the Filling:

  • 2 cups mint chocolate chip ice cream (store-bought or homemade)

Optional Add-Ons:

  • Mini chocolate chips
  • Sprinkles
  • Crushed chocolate cookies

Instructions

  • Prepare the Cookie Dough – In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In another bowl, beat butter, granulated sugar, and brown sugar until creamy. Mix in the egg and vanilla, then combine with dry ingredients.
  • Shape and Bake – Scoop dough onto a lined baking sheet, shaping into even rounds. Bake at 350°F (175°C) for 10-12 minutes. Let cool completely.
  • Soften the Ice Cream – Let mint chocolate chip ice cream soften slightly for easier spreading.
  • Assemble the Sandwiches – Place a scoop of ice cream onto one cookie, then top with another cookie and gently press down.
  • Roll in Toppings (Optional) – Roll edges in mini chocolate chips, sprinkles, or crushed cookies for added crunch.
  • Freeze – Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
