Ingredients

  1. 1 cup all-purpose flour
  2. 2 teaspoons baking powder
  3. 1/4 teaspoon salt
  4. 2 tablespoons granulated sugar
  5. 3/4 cup milk
  6. 1 large egg
  7. 2 tablespoons unsalted butter, melted
  8. 1 teaspoon vanilla extract
  9. Optional toppings: maple syrup, powdered sugar, fresh fruit, nut butter

Instructions

In a medium bowl, whisk together the flour, baking powder, salt, and sugar.

  1. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  2. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  3. Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil.
  4. Drop small spoonfuls of batter (about 1 tablespoon each) onto the skillet.
  5. Cook until small bubbles form on the surface, then flip and cook the other side until golden brown, about 1–2 minutes per side.
  6. Repeat with remaining batter. Serve warm with your favorite toppings.

Notes

  • Keep cooked pancakes warm in a 200°F (95°C) oven while you finish cooking the rest.
  • Use a tablespoon or small cookie scoop for uniform pancake size.
