Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Roll out the crust and cut into small circles slightly larger than the muffin cups. Press into each muffin well.
  3. In a bowl, whisk together eggs, milk, salt, and pepper until combined.
  4. Add a small spoonful of your chosen fillings to each crust-lined cup.
  5. Pour egg mixture over the fillings, filling each cup about ¾ full.
  6. Top with optional herbs or cheese.
  7. Bake for 18–22 minutes, until puffed and golden.
  8. Cool slightly in the pan before removing and serving warm or at room temperature.
