Mini Lunchbox Pizzas are quick, kid-friendly mini pizzas made with simple ingredients and customizable toppings. They bake in minutes and are perfect for school lunches, snacks, or easy family meals.

Ingredients

  • 4 English muffins or 8 mini pizza bases, halved
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 2024 pepperoni slices
  • 1/4 cup black olives, sliced (optional)
  • 1/4 cup bell peppers, diced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons grated parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Arrange the mini pizza bases or halved English muffins on the prepared baking sheet.
  3. Spread about 1 tablespoon of pizza sauce evenly over each base.
  4. Sprinkle shredded mozzarella cheese over the sauce.
  5. Add pepperoni slices, diced bell peppers, olives, or other preferred toppings.
  6. Lightly sprinkle dried oregano and garlic powder over each pizza.
  7. Drizzle a small amount of olive oil over the tops to help the edges crisp during baking.
  8. Sprinkle grated parmesan cheese on top if desired.
  9. Bake for 10–12 minutes until the cheese is melted and bubbly and the edges are lightly golden.
  10. Remove from the oven and allow to cool slightly before serving or packing into lunchboxes.

Notes

  • Use whole wheat English muffins for a slightly healthier option.
  • Swap pepperoni with cooked chicken, turkey slices, or sautéed vegetables.
  • Add fresh basil after baking for extra flavor and freshness.
  • Use a small amount of sauce to keep the bases from becoming soggy.
  • Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
