Ingredients

  • For the Dough:
    • 2 cups all-purpose flour
    • 2 tsp baking powder
    • ½ cup milk
    • 1 large egg
    • 2 tbsp melted butter
  • For the Filling:
    • 1 cup cream cheese, softened
    • ½ cup icing sugar
    • 1 tsp vanilla essence
  • For the Syrup:
    • 1 cup sugar
    • ½ cup water

Instructions

  • Prepare the Syrup: Combine the sugar and water in a saucepan over medium heat. Stir until the sugar dissolves, then simmer for about 5 minutes until the syrup thickens slightly. Set aside to cool.
  • Make the Dough: Mix flour and baking powder in a bowl. Add the milk, egg, and melted butter. Stir to form a smooth dough, then knead on a floured surface until soft and elastic. Let the dough rest for 15 minutes.
  • Prepare the Filling: Beat the cream cheese, icing sugar, and vanilla essence in a mixing bowl until smooth and creamy.
  • Shape the Koeksisters: Roll the dough to about ¼ inch thickness. Cut into strips about 3 inches long and 1 inch wide. Make a small slit in each strip and twist into a braid or knot.
  • Fry the Koeksisters: Heat oil in a deep fryer or large pot over medium heat. Fry the dough knots for 3-4 minutes per side until golden brown. Dip immediately into the cooled syrup, allowing them to soak for a minute before removing.
  • Fill the Koeksisters: Once cooled, use a piping bag or spoon to fill each koeksister with the cheesecake filling.
  • Serve: Arrange on a plate and enjoy!

Notes

  • Variations: Add chocolate drizzle, fruit preserves, coconut coating, or swap in gluten-free flour for a personalized twist.
  • Storage: Store in an airtight container for up to 2 days at room temperature. To refresh the crispiness, reheat in the oven at 350°F for 5 minutes.
  • Freezing: Freeze unfilled dough knots before frying; filled koeksisters don’t freeze well.
