Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface and cut it into 2-3 inch squares. You should have 12-16 squares depending on the size of your sheet.
- Place a small piece of brie cheese in the center of each puff pastry square. Top with a spoonful of apricot preserves and a sprinkle of fresh thyme or rosemary (if using).
- Fold the corners of the puff pastry toward the center and pinch the edges to seal the filling inside. You can leave the pastries open-faced if you prefer little tarts.
- In a small bowl, whisk the egg and brush the egg wash over the tops of the pastries for a golden finish.
