Ingredients

  1. 1 sheet puff pastry (store-bought or homemade), thawed if frozen
  2. 4 oz brie cheese, rind removed and cut into small pieces
  3. 1/4 cup apricot preserves or jam
  4. 1 tablespoon fresh thyme or rosemary, finely chopped (optional)
  5. 1 egg (for egg wash)
  6. 1 tablespoon melted butter (for brushing)

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  1. Roll out the puff pastry sheet on a lightly floured surface and cut it into 2-3 inch squares. You should have 12-16 squares depending on the size of your sheet.
