Mexican Meatloaf is a flavorful twist on the classic comfort food, blending seasoned ground beef with salsa, taco spices, cheese, and crushed tortilla chips for a bold and satisfying dinner with a Tex-Mex flair.

Ingredients

  • 1 1/2 lbs ground beef
  • 2 eggs
  • 3/4 cup breadcrumbs or crushed tortilla chips
  • 1 cup salsa (divided, use your preferred heat level)
  • 1 cup shredded cheddar or Mexican blend cheese (divided)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional toppings: sour cream, avocado, jalapeños, chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine ground beef, eggs, breadcrumbs or crushed chips, onion, garlic, taco seasoning, salt, and pepper.
  3. Add 1/2 cup of the shredded cheese and 1/2 cup of the salsa. Mix until well combined.
  4. Transfer the mixture into the prepared loaf pan and shape into a loaf.
  5. Spread the remaining 1/2 cup of salsa evenly over the top of the loaf.
  6. Bake uncovered for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
  7. In the last 5 minutes of baking, sprinkle the remaining cheese over the top and return to oven until melted.
  8. Let the meatloaf rest for 10 minutes before slicing and serving. Add optional toppings if desired.

Notes

  • Crushed tortilla chips add extra flavor and crunch compared to breadcrumbs.
  • Letting the meatloaf rest helps it hold together when sliced.
  • For a spicier kick, use hot salsa or add diced jalapeños to the meat mixture.
  • Pairs great with Mexican rice, beans, or tortillas.
