Ingredients

  1. 4 large eggs
    2 tablespoons olive oil
    1/4 cup crumbled feta cheese
    1/4 cup chopped tomatoes
    1/4 cup spinach, chopped
    1 tablespoon Kalamata olives, chopped
    Salt and pepper to taste
    Fresh parsley for garnish (optional)

Instructions

Heat olive oil in a large non-stick skillet over medium heat.

  1. Add the chopped tomatoes and spinach to the pan and sauté for 2-3 minutes until the spinach is wilted and the tomatoes soften.
  2. In a bowl, crack the eggs and beat them until well combined. Season with salt and pepper.
  3. Pour the eggs into the skillet with the tomatoes and spinach. Gently stir the eggs in a circular motion, allowing them to cook slowly.
  4. When the eggs are nearly cooked through but still a little soft, sprinkle in the feta and olives.
  5. Stir everything gently to combine, cooking for an additional 1-2 minutes until the eggs are fully set but still creamy.
  6. Remove from heat and garnish with fresh parsley, if desired.
