Instructions

Prepare the Marinade: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, cumin (if using), salt, and pepper until well combined.

  1. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes to 4 hours.
  2. Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium-high heat on the stovetop.
  3. Grill the Chicken: Remove the chicken from the marinade and discard any leftover marinade. Grill the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown.
  4. Rest the Chicken: Remove the chicken from the grill and let it rest for 5 minutes before slicing. This ensures the juices redistribute, keeping the chicken tender.
