Mediterranean Fries are crispy French fries topped with feta cheese, olives, tomatoes, herbs, and a drizzle of lemon juice or tzatziki, offering a bright, fresh twist on loaded fries with bold Mediterranean flavors.

Ingredients

  • 4 large Russet potatoes or 1 bag frozen French fries
  • Vegetable oil, for frying or baking
  • Salt, to taste
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh parsley or dill, chopped
  • 1 tablespoon lemon juice or zest
  • Optional: tzatziki sauce or garlic yogurt sauce, cucumber slices, oregano, olive oil drizzle

Instructions

  1. Wash and peel (optional) the potatoes, then cut into fries. Soak in cold water for 30 minutes, drain, and pat dry.
  2. Fry twice—first at 300°F (150°C) for 4–5 minutes, then at 375°F (190°C) for 2–3 minutes—or bake at 425°F (220°C) for 25–30 minutes until golden and crispy. If using frozen fries, cook according to package instructions.
  3. While fries are still hot, season with salt, a pinch of oregano, and lemon zest if using.
  4. Arrange fries on a serving platter. Top with crumbled feta, diced tomatoes, sliced olives, and red onions.
  5. Drizzle with lemon juice and a little olive oil if desired. Garnish with chopped parsley or dill.
  6. Serve immediately with tzatziki or garlic yogurt sauce on the side or drizzled on top.

Notes

  • Use vegan feta and yogurt-based sauces for a plant-based version.
  • Prep toppings ahead of time, but assemble just before serving to keep fries crisp.
  • Sweet potato fries also work well for a sweet-savory contrast.
  • Add grilled protein like chicken or falafel for a heartier dish.
  • For crunch, sprinkle crumbled pita chips on top.
