Mediterranean Chicken Zucchini Bake is a wholesome one-pan meal featuring juicy chicken, zucchini, tomatoes, olives, and herbs, all baked to perfection with a sprinkle of feta. It’s vibrant, healthy, and full of classic Mediterranean flavor.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cubed
  • 2 medium zucchinis, sliced into rounds or half-moons
  • 1 cup cherry or grape tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/3 cup Kalamata olives, pitted and halved
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme or Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or basil, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine chicken, zucchini, tomatoes, red onion, olives, and garlic.
  3. Drizzle with olive oil and lemon juice. Sprinkle with oregano, thyme, salt, and pepper. Toss to coat evenly.
  4. Transfer mixture to a greased baking dish and spread into an even layer.
  5. Bake for 25–30 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Remove from oven and sprinkle crumbled feta over the top.
  7. Garnish with chopped fresh parsley or basil, if desired. Serve warm.
